  • 2 cups Old-fashioned rolled oats
  • 1.5 cups All-purpose flour
  • 1 cup Light brown sugar
  • 1 cup Unsalted butter, melted
  • 0.5 teaspoons Salt
  • 1 teaspoons Vanilla extract
  • 1 cup Dried cranberries
  • 0.5 cup Granulated sugar
  • 0.25 cup Orange juice
  • 1 tablespoons Cornstarch
  • 2 tablespoons Water
  • 1 teaspoons Fresh orange zest

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving overhangs for easy removal later.

Step 2

In a large mixing bowl, combine the rolled oats, all-purpose flour, light brown sugar, and salt. Stir to combine.

Step 3

Pour the melted butter and vanilla extract into the dry ingredients. Stir until the mixture resembles a crumbly dough.

Step 4

Press two-thirds of the oat mixture firmly into the bottom of the prepared baking dish to form an even crust. Reserve the remaining mixture for the topping.

In a small saucepan, combine the dried cranberries, granulated sugar, and orange juice. Cook over medium heat, stirring occasionally, until the cranberries soften and the sugar dissolves (about 5 minutes).

In a small bowl, mix the cornstarch and water until smooth. Add this mixture to the cranberry mixture, along with the orange zest. Bring to a gentle simmer, stirring constantly, until the mixture thickens (about 2-3 minutes). Remove from heat and let cool slightly.

Spread the cranberry mixture evenly over the oat crust in the baking dish.
