  • 1 lb pork tenderloin
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 small (finely diced) shallot
  • 2 cloves (minced) garlic
  • 0.5 cup chicken broth
  • 0.5 cup cranberry sauce
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp fresh thyme leaves

Directions

Step 1

Trim the pork tenderloin of any excess fat and silver skin. Cut it into 1-inch-thick medallions.

Step 2

Season the pork medallions on both sides with salt and black pepper.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the pork medallions, making sure not to overcrowd the pan. Sear for 3-4 minutes per side until golden brown and cooked through. Remove the pork from the skillet and set aside on a plate, tented with foil.
