Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 1 cup Fresh cranberries
  • 1 cup Granulated sugar
  • 0.25 cup Fresh mint leaves (chopped)
  • 0.5 cup Unsalted butter (melted and cooled)
  • 2 pieces Large eggs
  • 0.75 cup Whole milk
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper for easy removal.

Step 2

In a medium bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a separate large mixing bowl, combine the granulated sugar and the chopped fresh mint leaves. Use your fingers to rub the mint into the sugar until aromatic and well incorporated.

Step 4

Add the eggs to the sugar mixture and beat until light and frothy (about 2 minutes).

Step 5

Stir in the melted butter, vanilla extract, and milk, mixing until smooth.

Step 6

Gradually add the dry ingredients (in 2-3 batches) into the wet mixture, stirring until just combined. Be careful not to overmix.

Step 7

Gently fold in the fresh cranberries until evenly distributed throughout the batter.

Step 8

Pour the batter into the prepared loaf pan and spread it out evenly with a spatula.

Step 9

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

Step 10

Remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.

Step 11

Once cooled, dust with powdered sugar if desired, slice, and serve.
