Ingredients

  • 3 cups fresh cranberries
  • 0.75 cup pure maple syrup
  • 0.5 cup orange juice
  • 0.5 cup water
  • 1 tablespoon orange zest
  • 1 piece cinnamon stick
  • 1 teaspoon grated fresh ginger
  • 0.5 cup chopped pecans (optional)

Directions

Step 1

Rinse the cranberries thoroughly and discard any soft or damaged ones.

Step 2

In a medium saucepan, combine the maple syrup, orange juice, water, orange zest, grated ginger, and the cinnamon stick.

Step 3

Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally.

Step 4

Once simmering, add the cranberries to the saucepan and cook for about 10-15 minutes. Stir occasionally and watch as the cranberries begin to burst and the mixture thickens.

Step 5

If using pecans, stir them in during the last 5 minutes of cooking.

Step 6

Remove the saucepan from the heat once the conserve has reached your desired consistency. It will thicken further as it cools.

Step 7

Discard the cinnamon stick and let the conserve cool to room temperature.

Step 8

Transfer the cranberry maple conserve to a clean glass jar or airtight container. Store in the refrigerator for up to two weeks.
