Ingredients

  • 6 oz cranberry-flavored gelatin mix
  • 2 cups boiling water
  • 1 cup cold water
  • 14 oz cranberry sauce (whole berry)
  • 8 oz crushed pineapple (with juice)
  • 0.5 cup chopped pecans
  • 1 teaspoon orange zest

Directions

Step 1

In a large mixing bowl, dissolve the cranberry-flavored gelatin mix in 2 cups of boiling water. Stir well until fully dissolved, about 2 minutes.

Step 2

Stir in 1 cup of cold water to cool the mixture slightly.

Step 3

Add the whole berry cranberry sauce to the gelatin mixture and whisk until the cranberry sauce is evenly incorporated.

Step 4

Drain the crushed pineapple, reserving the juice, and stir the pineapple into the mixture. (You can save the juice for another use or discard it.)

Step 5

Stir in the chopped pecans and the orange zest. Mix everything thoroughly to combine.

Step 6

Pour the mixture into a 9x13-inch glass dish or a decorative gelatin mold.

Step 7

Refrigerate for at least 4 hours, or until the gelatin is fully set.

Step 8

Once set, slice or unmold the gelatin salad and serve chilled. Optionally, garnish with additional chopped pecans or fresh cranberries for a festive touch.
