Ingredients

  • 2 cups Cranberry juice
  • 2 packets Unflavored gelatin
  • 0.75 cups Granulated sugar
  • 0.5 cups Orange juice
  • 1 cups Crushed pineapple (drained)
  • 0.5 cups Chopped walnuts
  • 1 cups Fresh or frozen cranberries (chopped)
  • 1 tablespoon Orange zest

Directions

Step 1

Pour 1 cup of cranberry juice into a medium-sized saucepan and sprinkle the unflavored gelatin packets over the surface. Let it sit for 1-2 minutes to allow the gelatin to bloom.

Step 2

Set the saucepan over medium heat and stir constantly until the gelatin is fully dissolved, which takes about 2-3 minutes.

Step 3

Remove the saucepan from heat and stir in the granulated sugar until it dissolves completely.

Step 4

Add the remaining 1 cup of cranberry juice and the orange juice to the mixture, stirring to combine.

Step 5

Let the mixture cool to room temperature, about 15-20 minutes.

Step 6

Once cool, stir in the drained crushed pineapple, chopped walnuts, chopped cranberries, and orange zest.

Step 7

Pour the mixture into a lightly greased 6-cup mold or bundt pan, smoothing the surface if necessary.

Step 8

Cover the mold with plastic wrap and refrigerate for at least 4 hours or overnight, until the gelatin is set.

Step 9

To unmold, briefly dip the mold into warm water for 5-10 seconds, then invert onto a serving plate. Gently wiggle to release the mold.

Step 10

Serve chilled and enjoy your tangy Cranberry Fruit Mold!
