Ingredients

  • 1 cup Fresh cranberries
  • 0.5 cup Granulated sugar
  • 0.25 cup Water
  • 8 ounces Cream cheese, softened
  • 0.5 cup Unsalted butter, softened
  • 2 cups Powdered sugar
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Heavy cream

Directions

Step 1

Rinse the fresh cranberries thoroughly and add them to a small saucepan with the granulated sugar and water.

Step 2

Cook over medium heat for about 5 minutes, stirring occasionally, until the cranberries burst and the mixture thickens slightly. Remove from heat and let it cool completely.

Step 3

Once cooled, puree the cranberry mixture in a blender or food processor until smooth. Set aside.

Step 4

In a large mixing bowl, beat the softened cream cheese and unsalted butter with a hand mixer or stand mixer fitted with a paddle attachment until creamy and well combined.

Step 5

Gradually add the powdered sugar to the cream cheese mixture, continuing to beat on low speed until all the sugar is incorporated and the mixture is smooth.

Step 6

Mix in the vanilla extract and 2 tablespoons of the cranberry puree. Adjust the amount of puree to achieve your desired flavor and color intensity.

Step 7

If the frosting is too thick, add the heavy cream one tablespoon at a time, beating on medium speed, until you reach your preferred consistency.

Step 8

Once the frosting is smooth and fluffy, it's ready to use. Spread or pipe onto cakes, cupcakes, or desserts of your choice.
