Ingredients

  • 1.5 cups dried cranberries
  • 1 cup pitted dates
  • 0.5 cup orange juice
  • 0.5 cup water
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter, melted
  • 0.5 cup brown sugar
  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang for easy removal.

Step 2

In a medium saucepan over medium heat, combine the dried cranberries, pitted dates, orange juice, water, and granulated sugar.

Step 3

Cook the mixture, stirring frequently, for about 8-10 minutes, or until the cranberries have softened, the dates have broken down, and the mixture has a thick, jam-like consistency. Set aside to cool slightly.

Step 4

In a large mixing bowl, stir together the melted butter, brown sugar, and vanilla extract until combined.

Step 5

Add the flour, oats, baking soda, and salt to the butter mixture, and stir until it forms a crumbly dough.

Step 6

Press half of the dough mixture evenly into the bottom of your prepared pan.

Step 7

Spread the cranberry-date filling evenly over the bottom crust.

Step 8

Crumble the remaining oat mixture over the filling layer, pressing gently to ensure it adheres slightly.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and firm.

Step 10

Allow the bars to cool completely in the pan before lifting out using the parchment paper overhang. Slice into 16 squares and serve.
