Ingredients

  • 340 grams Fresh cranberries
  • 200 grams Granulated sugar
  • 1 cup Crushed pineapple (drained)
  • 1 cup Mini marshmallows
  • 1 cup Heavy whipping cream
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped pecans or walnuts (optional)

Directions

Step 1

Rinse the fresh cranberries thoroughly and pat them dry. Using a food processor, pulse the cranberries until they are coarsely chopped.

Step 2

In a medium-sized mixing bowl, combine the chopped cranberries with the granulated sugar. Stir well, cover, and let it rest in the refrigerator for at least 2 hours or overnight. This allows the cranberries to sweeten and release their juices.

Step 3

After the cranberry mixture has rested, drain any excess liquid and return the cranberries to the bowl.

Step 4

Add the drained crushed pineapple and mini marshmallows to the cranberry mixture. If you are using chopped pecans or walnuts, stir them in at this stage.

Step 5

In a separate chilled bowl, whip the heavy cream using a hand or stand mixer until soft peaks form.

Step 6

Add the powdered sugar and vanilla extract to the whipped cream, and continue to whip until stiff peaks form.

Step 7

Gently fold the whipped cream into the cranberry mixture until everything is well combined.

Step 8

Transfer the salad to a serving dish, cover, and refrigerate for at least 1 hour before serving to allow the flavors to meld together.

Step 9

Serve chilled as a festive side dish or dessert, and enjoy!
