Ingredients

  • 2 cups Fresh cranberries
  • 1 large Orange
  • 1 medium Lemon
  • 2.5 cups Granulated sugar
  • 1.5 cups Water
  • 1 teaspoon Vanilla extract

Directions

Step 1

Rinse and sort the fresh cranberries, discarding any that are bruised or soft. Set aside.

Step 2

Wash the orange and lemon thoroughly. Use a vegetable peeler or zester to remove the outer zest from both the orange and lemon, being careful to avoid the bitter white pith. Slice the zest into thin strips.

Step 3

Juice the orange and lemon. Combine the juices in a measuring cup and add enough water to equal 1.5 cups of liquid total.

Step 4

In a medium-sized heavy-bottomed saucepan, combine the cranberries, citrus zest, citrus juice mixture, and granulated sugar.

Place the saucepan over medium heat and stir constantly until the sugar dissolves and the mixture begins to simmer.

Step 6

Reduce the heat to low and continue simmering the mixture for about 30-35 minutes, stirring occasionally, until the cranberries burst and the mixture thickens.

Remove the pan from the heat and stir in the vanilla extract. Let the marmalade rest for 5 minutes before ladling it into clean, sterilized jars.

Seal the jars and allow them to cool completely before storing. The marmalade will keep for up to 3 weeks in the refrigerator or longer if properly canned using a water bath canning method.
