Ingredients

  • 2 cups old-fashioned rolled oats
  • 1.5 cups all-purpose flour
  • 1 cup light brown sugar, packed
  • 0.5 cup granulated sugar
  • 1 cup unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup dried cranberries
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper, leaving an overhang for easy removal.

Step 2

In a large mixing bowl, combine the rolled oats, flour, brown sugar, granulated sugar, baking soda, and salt. Stir until well mixed.

Step 3

Pour in the melted butter and vanilla extract. Mix until the ingredients are evenly moistened and form a crumbly texture.

Step 4

Reserve about 1/2 cup of the oat mixture for topping. Press the remaining mixture firmly into the prepared pan to create an even base.

Step 5

Sprinkle the dried cranberries, chocolate chips, and chopped nuts (if using) evenly over the base layer.

Step 6

Crumble the reserved oat mixture over the top, pressing gently so it adheres but still remains crumbly.

Step 7

Bake in the preheated oven for 22-25 minutes, or until the top is golden brown and the edges are set.

Step 8

Remove the pan from the oven and allow the bars to cool completely in the pan on a wire rack.

Step 9

Once cooled, use the parchment paper overhang to lift the bars out of the pan. Slice into 12 even squares or bars.

Step 10

Store in an airtight container at room temperature for up to 5 days or in the refrigerator for up to 10 days.
