Ingredients

  • 1 cup fresh cranberries
  • 0.5 cup granulated sugar
  • 0.25 cup water
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon fresh rosemary
  • 1 loaf baguette
  • 2 tablespoons olive oil
  • 4 ounces goat cheese
  • 0.25 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley or rosemary (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium saucepan, combine cranberries, sugar, and water. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens, about 5-7 minutes.

Step 3

Stir in the balsamic vinegar, honey, and rosemary, then cook for an additional 2 minutes. Remove the cranberry mixture from heat and set aside to cool.

Step 4

Slice the baguette into thin rounds (about 1/2 inch thick). Lay the slices on a baking sheet and brush both sides lightly with olive oil.

Step 5

Toast the baguette slices in the preheated oven for 7-8 minutes, turning halfway through, until they are golden and crisp.

Step 6

Spread a thin layer of goat cheese on each toasted baguette slice.

Step 7

Top each slice with a spoonful of the cooled cranberry mixture.

Step 8

Sprinkle with a pinch of sea salt and black pepper for added flavor.

Step 9

Garnish with fresh parsley or rosemary, and serve immediately.
