Ingredients

  • 4 pounds beef brisket
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced
  • 3 large garlic cloves, minced
  • 1 cup beef broth
  • 14 ounces cranberry sauce (whole berry)
  • 0.5 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dried thyme
  • 2 whole bay leaves

Directions

Step 1

Preheat your oven to 325°F (163°C).

Step 2

Pat the brisket dry with paper towels and season it on both sides with kosher salt and black pepper.

Step 3

Heat the olive oil in a large, oven-safe Dutch oven or skillet over medium-high heat.

Step 4

Sear the brisket in the hot oil for 4-5 minutes per side, until it is deeply browned. Remove the brisket and set aside.

Step 5

In the same pot, add the sliced onion and sauté for 3-4 minutes, until softened and slightly caramelized.

Step 6

Add the minced garlic and cook for 1 more minute, stirring frequently.

Step 7

Pour in the beef broth to deglaze the pot, scraping up any browned bits from the bottom.

Step 8

Stir in the cranberry sauce, ketchup, brown sugar, apple cider vinegar, and dried thyme until well combined.

Step 9

Return the brisket to the pot, nestling it into the sauce. Add the bay leaves to the sauce as well.

Step 10

Cover the pot with a lid or tightly with aluminum foil, and transfer it to the oven.

Step 11

Bake for 3.5-4 hours, or until the brisket is tender and easily pulls apart with a fork. Baste the meat with the sauce every hour for maximum flavor.

Step 12

Remove the brisket from the oven and let it rest for 10-15 minutes before slicing against the grain.

Step 13

Serve the brisket with the cranberry sauce spooned over the top, alongside your favorite sides like mashed potatoes or roasted vegetables.
