  • 1 teaspoon Black pepper

  • 1 large Yellow onion, diced
  • 4 cloves Garlic cloves, minced
  • 4 medium Carrots, peeled and sliced
  • 3 medium Celery stalks, sliced
  • 4 cups Beef broth
  • 1.5 cups Fresh cranberries
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 leaf Bay leaf
  • 3 medium Russet potatoes, peeled and cubed
  • 2 tablespoons Honey
  • 2 tablespoons Parsley, chopped (optional, for garnish)

Directions

Step 1

Season the beef stew meat with salt and black pepper.

Step 2

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 3

Sear the beef in batches until browned on all sides, about 4-5 minutes per batch. Remove and set aside.

In the same pot, add onion and garlic. Sauté for 2-3 minutes until fragrant and softened.

Add the carrots and celery. Cook for another 5 minutes, stirring occasionally.
