  • 3 pounds boneless pork loin roast
  • 1 cup dried apricots
  • 1 cup dried cranberries
  • 1 cup orange juice
  • 2 tablespoons brown sugar
  • 2 tablespoons Dijon mustard
  • 3 large garlic cloves, minced
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Preheat your oven to 325°F (163°C).

Step 2

In a small bowl, combine the salt, black pepper, and minced garlic. Rub this mixture all over the pork roast to season it.

Heat the olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Sear the pork roast on all sides until golden brown, about 3–4 minutes per side. Remove the pork roast and set it aside.

In the same skillet, add the dried apricots, dried cranberries, orange juice, chicken broth, brown sugar, and Dijon mustard. Stir to combine and bring the mixture to a light simmer.

Slice the pork roast into 1/2-inch thick slices. Serve with the cranberry apricot glaze drizzled over the top.
