Ingredients

  • 2 cups All-purpose flour
  • 0.25 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 0.5 cup Cold unsalted butter (cut into small cubes)
  • 0.5 cup Dried cranberries
  • 0.5 cup Applesauce (unsweetened)
  • 0.33 cup Heavy cream (plus extra for brushing)
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, salt, and ground cinnamon.

Step 3

Using a pastry cutter, two forks, or your fingertips, cut the cold butter into the flour mixture until it resembles coarse crumbs.

Step 4

Stir in the dried cranberries, evenly distributing them throughout the crumb mixture.

Step 5

In a small bowl, mix together the applesauce, heavy cream, and vanilla extract until combined.

Step 6

Pour the wet mixture into the dry ingredients, and gently stir with a spatula or wooden spoon until the dough begins to come together. Be careful not to overmix; it should be slightly sticky.

Step 7

Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat it into a 7-inch circle about 3/4-inch thick.

Step 8

Use a sharp knife or bench scraper to cut the circle into 8 equal triangles (like slicing a pizza). Arrange the scones on the prepared baking sheet, leaving space between each piece.

Step 9

Brush the tops of the scones with a bit of heavy cream to encourage browning.

Step 10

Bake in the preheated oven for 16 to 18 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.

Step 11

Remove from the oven and allow the scones to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely or serve warm.
