Ingredients

  • 400 grams Fresh or frozen cranberries
  • 200 grams Granulated sugar
  • 500 milliliters Water
  • 1 whole Vanilla bean (or vanilla extract)
  • 2 tablespoons Fresh lemon juice

Directions

Step 1

In a medium-sized saucepan, combine the cranberries, sugar, and water. If using a vanilla bean, split it lengthwise and scrape the seeds into the saucepan. Add the bean pod as well. If using vanilla extract, add it later in the process.

Step 2

Bring the mixture to a simmer over medium heat. Cook for 10-15 minutes, or until the cranberries have burst and softened.

Step 3

Remove the saucepan from the heat and let it cool slightly. If you used a vanilla bean, remove and discard the pod.

Step 4

Using a blender or an immersion blender, puree the cranberry mixture until smooth.

Step 5

Strain the puree through a fine-mesh sieve into a large bowl, pressing with a spatula or spoon to extract all the liquid. Discard the solids.

Step 6

Stir in the lemon juice. If using vanilla extract, add it at this point and mix well.

Step 7

Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or until completely chilled.

Step 8

Churn the chilled mixture in an ice cream maker according to the manufacturer’s instructions.

Once churned, transfer the sorbet to an airtight container and freeze for 2-3 hours to firm up.
