Ingredients

  • 2 cups Rolled oats
  • 1.5 cups All-purpose flour
  • 0.75 cups Brown sugar
  • 0.75 cups Unsalted butter, melted
  • 0.5 teaspoons Salt
  • 1.5 cups Dates, pitted and chopped
  • 0.75 cups Water
  • 1 teaspoons Vanilla extract
  • 0.75 cups Dried cranberries
  • 0.5 cups Caramel sauce

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, melted butter, and salt. Stir until the mixture is crumbly and well combined.

Step 3

Press two-thirds of the oat mixture firmly into the bottom of the prepared baking pan, forming an even layer. Set the remaining one-third aside for the topping.

Step 4

In a medium saucepan, combine the chopped dates and water. Cook over medium heat, stirring occasionally, until the dates break down and form a thick paste, about 8-10 minutes.

Step 5

Remove the saucepan from the heat and stir in the vanilla extract.

Step 6

Spread the date mixture evenly over the oat crust in the pan.

Step 7

Sprinkle the dried cranberries evenly over the date layer, and drizzle the caramel sauce on top.

Step 8

Crumble the remaining oat mixture over the cranberry and caramel layers, ensuring that some date filling is visible.

Step 9

Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown.

Step 10

Allow the bars to cool completely in the pan. Once cooled, use the parchment paper overhang to lift the bars out of the pan and onto a cutting board.

Step 11

Cut into 12 bars and serve. Store any leftovers in an airtight container at room temperature for up to 3 days.
