Ingredients

  • 2 medium-sized Butternut squash
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt

  • 0.5 teaspoon Ground cinnamon
  • 2 tablespoons Honey
  • 0.5 cup Dried cranberries
  • 0.25 cup Sliced almonds
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.

Step 2

Peel the butternut squash, cut it in half lengthwise, and scoop out the seeds. Slice the squash into 1-inch cubes.

Step 3

In a large mixing bowl, toss the squash cubes with olive oil, salt, black pepper, and ground cinnamon until evenly coated.
