Ingredients

  • 0.25 cup Pumpkin seeds (pepitas)
  • 1 tablespoon Stevia or monk fruit sweetener
  • 2 tablespoons Coconut oil, melted
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper for easy cleanup.

Step 2

In a large mixing bowl, combine the rolled oats, unsweetened dried cranberries, sliced almonds, ground cinnamon, unsweetened coconut flakes, and pumpkin seeds. Stir well to evenly distribute the dry ingredients.
