  • 50 g Steel-cut oats
  • 300 ml Whipping cream
  • 2 tbsp Scottish whisky
  • 3 tbsp Runny honey
  • 200 g Raspberries (fresh)
  • 1 tbsp Caster sugar
  • 4 leaves Mint leaves (optional, for garnish)

Directions

Step 1

Spread the steel-cut oats evenly on a dry frying pan and toast over medium heat, stirring frequently, until golden and fragrant (about 3-5 minutes). Remove from heat and allow to cool.

Step 2

In a mixing bowl, whip the cream until soft peaks form. Be careful not to overwhip.

Step 3

Gently fold in the whisky and 2 tablespoons of the honey into the whipped cream. Taste and adjust the sweetness if needed.

In another bowl, mash half of the raspberries with the caster sugar using a fork to create a simple fruit purée.
