Ingredients

  • 3 cups turkey meat (cooked, shredded)
  • 2 tablespoons butter
  • 1 medium onion (diced)
  • 2 medium carrots (peeled and sliced)
  • 2 medium celery stalks (sliced)
  • 2 cloves garlic cloves (minced)
  • 2 tablespoons flour
  • 6 cups chicken or turkey stock
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 1 whole bay leaf
  • 2 medium potatoes (peeled and diced)
  • 1 cup frozen corn (optional)
  • 1 cup frozen peas (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

In a large pot, melt the butter over medium heat. Add the diced onion, sliced carrots, and celery and sauté for 5-7 minutes until they soften and become fragrant.

Step 2

Add the minced garlic and cook for another minute, stirring to prevent burning.

Step 3

Sprinkle the flour over the vegetables and mix well to coat. Cook for 1-2 minutes to remove the raw flour taste.

Step 4

Slowly pour in the chicken or turkey stock, stirring constantly to avoid lumps. Bring the mixture to a gentle simmer.

Step 5

Stir in the thyme, rosemary, bay leaf, diced potatoes, and salt and pepper. Simmer for 20-25 minutes until the potatoes are tender.

Step 6

Add the shredded turkey meat, frozen corn, and peas (if using). Simmer for another 10 minutes to heat through and meld the flavors.

Step 7

Taste the soup and adjust seasoning as needed. Remove the bay leaf before serving.

Step 8

Ladle the soup into bowls and garnish with freshly chopped parsley. Serve hot and enjoy!
