Ingredients

  • 3 tablespoons Olive oil
  • 8 large cloves Garlic cloves
  • 2 teaspoons Red chili flakes
  • 1 large Sweet onion
  • 28 ounces Crushed San Marzano tomatoes
  • 2 cups Fresh cherry tomatoes
  • 1.5 cups Cooked fresh crab meat
  • 0.25 cup Dry white wine
  • 0.5 teaspoon Crushed red pepper or cayenne (optional for extra heat)
  • 0.5 cup Fresh basil leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 1 teaspoon Sugar

Directions

Step 1

Heat the olive oil in a large deep skillet or saucepot over medium heat.

Step 2

Mince the garlic and finely chop the onion. Add the garlic and red chili flakes to the hot oil. Sauté for 30 seconds until fragrant, being careful not to burn the garlic.

Step 3

Add the onion and cook for 5-7 minutes until softened and translucent.

Step 4

Pour in the crushed tomatoes and stir well to combine. Add the fresh cherry tomatoes, ensuring some are halved for texture and others left whole.

Step 5

Mix in the white wine, salt, black pepper, and sugar. Bring the sauce to a simmer, stirring occasionally.

Step 6

Cover the pan slightly and allow the sauce to simmer gently for 25 minutes, stirring occasionally. The cherry tomatoes should begin to break down and release their juices.

Step 7

Gently stir in the fresh crab meat, being careful not to break it down too much as you want large chunks in the sauce.

Step 8

Taste the sauce and adjust seasoning, adding more salt or spice if desired. If extra heat is preferred, stir in the optional crushed red pepper or cayenne.

Step 9

Add the fresh basil leaves, tearing them by hand for maximum flavor. Mix gently into the sauce.

Step 10

Simmer the sauce for an additional 5 minutes to allow the flavors to meld together.

Step 11

Serve immediately over al dente spaghetti, or store in an airtight container in the fridge for up to 3 days.
