Ingredients

  • 4 pieces Russet potatoes
  • 1 cup Lump crab meat
  • 1 cup Sharp cheddar cheese, shredded
  • 4 tablespoons Cream cheese, softened
  • 2 tablespoons Unsalted butter
  • 2 pieces Green onions, thinly sliced
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the russet potatoes thoroughly, pat them dry, and prick each potato a few times with a fork.

Step 3

Rub the potatoes with olive oil and place them on a baking sheet. Bake for 50-60 minutes, or until the potatoes are tender and can be easily pierced with a fork.

Step 4

Once the potatoes are cool enough to handle, cut a lengthwise slit on the top of each potato and gently scoop out the flesh into a mixing bowl, leaving a small border inside the skin to create a shell.

Step 5

Mash the potato flesh with a fork or potato masher until smooth. Add the cream cheese, butter, cheddar cheese (reserving a small amount for topping), garlic powder, smoked paprika, salt, and black pepper. Mix until well combined.
