Ingredients

  • 4 whole Large portabella mushrooms
  • 1 cup Lump crab meat
  • 4 ounces Cream cheese
  • 0.5 cup Blue cheese crumbles
  • 0.25 cup Panko breadcrumbs
  • 1 tablespoon Fresh parsley, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 1 teaspoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Gently clean the portabella mushrooms with a damp paper towel and remove the stems. Use a spoon to carefully scrape out the gills and create space for stuffing.

Step 3

Place the cleaned mushrooms on a parchment-lined baking sheet, gill side up. Brush them lightly with 1 tablespoon of olive oil and set aside.

Step 4

In a mixing bowl, combine the lump crab meat, cream cheese, 1/4 cup of the blue cheese crumbles, panko breadcrumbs, parsley, minced garlic, lemon juice, salt, and black pepper. Mix until well combined.

Step 5

Divide the crab mixture into four portions and stuff each portabella mushroom. Be generous, ensuring they’re fully filled.

Step 6

Top each stuffed mushroom with the remaining blue cheese crumbles for added flavor.

Step 7

Drizzle the mushrooms with the remaining tablespoon of olive oil to help them crisp up and bake beautifully.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden-brown on top.

Step 9

Remove from the oven and let cool for 5 minutes before serving.

Step 10

Garnish with additional chopped parsley if desired. Serve warm and enjoy the harmony of flavors!
