Ingredients

  • 4 pieces Chicken breasts
  • 1 cup Lump crab meat
  • 4 ounces Cream cheese, softened
  • 0.25 cup Parmesan cheese, grated
  • 2 stalks Green onions, finely chopped
  • 2 cloves Garlic, minced
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 0.33 cup Panko breadcrumbs
  • 1 tablespoon Butter, melted

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a baking dish and set aside.

Step 2

Place the chicken breasts on a cutting board. Using a sharp knife, carefully cut a pocket into the side of each breast, being careful not to cut all the way through.

Step 3

In a medium bowl, combine the lump crab meat, cream cheese, Parmesan cheese, green onions, garlic, paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix well until the filling is smooth and evenly combined.

Spoon an equal amount of the crab mixture into the pocket of each chicken breast. Secure the opening with toothpicks if needed to keep the filling from spilling out.
