  • 227 grams fresh lump crab meat
  • 150 grams green peas (fresh or frozen)
  • 0.25 medium red onion

  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard

  • 0.25 teaspoon black pepper
  • 100 grams mixed greens or lettuce leaves

Directions

Step 1

If using frozen peas, blanch them by boiling a small pot of water. Add the peas and cook for 2 minutes, then immediately transfer them to an ice bath to cool. Drain and set aside.
