Ingredients

  • 250 grams Lump crab meat
  • 120 grams All-purpose flour
  • 30 grams Cornstarch
  • 1 teaspoon Baking powder
  • 1 large Egg
  • 120 milliliters Whole milk
  • 2 stalks Green onions (finely chopped)
  • 2 tablespoons Fresh parsley (finely chopped)
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 500 milliliters Vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, paprika, salt, and black pepper. Whisk until evenly mixed.

Step 2

In a separate bowl, whisk the egg and milk together until smooth.

Step 3

Slowly add the wet ingredients into the dry ingredients, stirring gently to form a smooth batter.

Step 4

Carefully fold in the crab meat, green onions, and parsley. Mix until just combined, ensuring the crab remains in chunks.

Step 5

Heat the vegetable oil in a deep skillet or pot over medium-high heat, aiming for a temperature of 175°C (350°F).

Step 6

Using a tablespoon, scoop portions of the batter and gently drop them into the hot oil. Fry in small batches to avoid overcrowding.

Step 7

Cook each fritter for 2-3 minutes per side, or until golden brown and crispy. Use a slotted spoon to transfer the cooked fritters to a plate lined with paper towels.

Step 8

Repeat with the remaining batter until all the fritters are cooked.

Step 9

Serve hot with your favorite dipping sauce, such as tartar sauce, spicy mayo, or lemon aioli.
