  • 1 cup All-purpose flour
  • 1.5 cups Milk
  • 2 large Eggs
  • 2 tablespoons Butter (melted)

  • 1 tablespoon Olive oil or butter (for cooking crepes)
  • 1 cup Crab meat (fresh or canned, drained)
  • 4 ounces Cream cheese (softened)
  • 2 tablespoons Mayonnaise
  • 1 tablespoon Lemon juice
  • 1 clove Garlic (minced)
  • 1 tablespoon Fresh dill (chopped)
  • 2 stalks Green onions (chopped)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a medium bowl, whisk together the all-purpose flour, milk, eggs, melted butter, and salt until smooth. Cover and let the batter rest for 15 minutes.

Heat a nonstick skillet or crepe pan over medium heat. Lightly grease it with olive oil or butter.

Pour about 1/4 cup of the crepe batter into the pan. Swirl the pan to distribute the batter evenly into a thin layer.

Cook for about 2 minutes, or until the edges begin to lift, then flip the crepe and cook for another 1-2 minutes. Transfer to a plate and repeat with the remaining batter.
