Ingredients

  • 2 pounds Baby red potatoes
  • 8 cups Water
  • 3 tablespoons Crab boil seasoning (store-bought or homemade)
  • 1 teaspoon Salt
  • 1 whole Lemon
  • 4 tablespoons Unsalted butter
  • 1 teaspoon Garlic powder
  • 2 tablespoons Chopped fresh parsley (optional)

Directions

Step 1

Wash and scrub the baby red potatoes to remove any dirt. Cut any larger potatoes in half to ensure they’re all of a uniform size.

Step 2

In a large pot, add the water, crab boil seasoning, and salt. Halve the lemon and squeeze the juice into the pot, then toss the lemon halves in as well for extra flavor.

Step 3

Bring the seasoned water to a rolling boil over high heat.

Step 4

Carefully add the potatoes to the boiling water. Reduce the heat to medium-high and cook the potatoes for 15-20 minutes, or until they are fork-tender but not falling apart.

Step 5

While the potatoes cook, melt the butter in a small saucepan over low heat. Stir in the garlic powder and set aside.

Step 6

Once the potatoes are cooked, drain them in a colander and discard the lemon halves.

Step 7

Return the drained potatoes to the pot or a serving dish. Drizzle the melted garlic butter over the top, tossing gently to coat the potatoes evenly.

Step 8

Garnish with fresh parsley if desired before serving. Serve immediately and enjoy the zesty, spiced flavors!
