Ingredients

  • 200 grams Cooked crab meat
  • 2 tablespoons Mayonnaise
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 medium Avocado
  • 4 pieces Lettuce leaves
  • 1 large Tomato
  • 4 slices Whole grain sandwich bread
  • 1 tablespoon Butter

Directions

Step 1

In a medium bowl, combine the cooked crab meat, mayonnaise, lemon juice, chopped parsley, salt, and black pepper. Mix until well blended and set aside.

Step 2

Slice the avocado in half, remove the pit, and scoop out the flesh into a small bowl. Mash the avocado with a fork until smooth, adding a little salt if desired.

Step 3

Wash and pat dry the lettuce leaves. Slice the tomato into thin rounds.

Step 4

Lightly butter one side of each slice of sandwich bread.

Step 5

Heat a large skillet over medium heat. Place the buttered sides of two slices of bread down onto the skillet and toast for 1-2 minutes until golden and slightly crispy. Remove from the skillet and repeat for the remaining slices of bread.

To assemble the sandwiches, spread a generous layer of mashed avocado on the unbuttered side of one slice of toasted bread.
