Ingredients

  • 1 cup Fresh crab meat
  • 8 Asparagus spears
  • 8 Romaine or butter lettuce leaves
  • 0.25 cup Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Fresh lemon juice
  • 1 tablespoon Fresh dill, chopped
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Bring a small pot of water to a boil. Blanch the asparagus spears for 2 minutes until tender-crisp. Drain and rinse under cold water to stop the cooking process. Pat dry with paper towels.

Step 2

In a medium mixing bowl, combine the crab meat, Greek yogurt, Dijon mustard, lemon juice, fresh dill, salt, and pepper. Mix gently to avoid breaking up the crab meat too much.

Step 3

Lay out the lettuce leaves on a flat surface. Place a small amount of the crab mixture in the center of each leaf.
