Ingredients

  • 12 sheets Egg roll wrappers
  • 1 cup Fresh lump crab meat
  • 12 whole Asparagus spears
  • 1 teaspoon Garlic, minced
  • 1 teaspoon Soy sauce
  • 1 teaspoon Sesame oil
  • 2 tablespoons Green onions, finely chopped
  • 2 tablespoons Water
  • 4 cups Cooking oil, for frying
  • 0.5 cup Sweet chili sauce
  • 0.25 cup Soy sauce (for dipping)
  • 1 teaspoon Fresh ginger, grated
  • 1 teaspoon Rice vinegar
  • 0.25 cup Mayonnaise
  • 1 teaspoon Toasted sesame oil
  • 1 teaspoon Soy sauce (for sesame dipping)

Directions

Step 1

Wash and trim the tough ends off the asparagus spears.

Step 2

Blanch the asparagus in boiling water for 1 minute, then transfer to a bowl of ice water to stop the cooking. Pat dry and set aside.

Step 3

In a mixing bowl, combine the lump crab meat, minced garlic, soy sauce, sesame oil, and chopped green onions. Mix gently to avoid breaking up the crab too much.

Take an egg roll wrapper and place it on a flat surface in a diamond orientation (one corner pointing toward you). Place 1 asparagus spear horizontally across the center and top with about 2 tablespoons of the crab mixture.
