Ingredients

  • 12 oz Fettuccine pasta
  • 3 tbsp Butter
  • 2 cups Heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 cloves Garlic, minced
  • 2 cups Broccoli florets
  • 8 oz Cooked crab meat, lump or claw
  • 1 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped
  • 4 quarts Water
  • 1 tbsp Salt (for pasta water)

Directions

Step 1

Bring a large pot of water to a boil and add 1 tablespoon of salt. Cook the fettuccine pasta according to package instructions until al dente, typically 9-11 minutes. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

Step 2

Meanwhile, in a medium saucepan, bring 4 cups of water to a boil. Add the broccoli florets and blanch for 2-3 minutes until vibrant green and tender-crisp. Drain and set aside.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 4

Lower the heat to medium-low and add the butter to the skillet. Once melted, pour in the heavy cream and stir to combine. Allow the cream to simmer gently for 3-4 minutes, stirring occasionally.

Step 5

Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. Season with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 6

Add the blanched broccoli and cooked crab meat to the Alfredo sauce. Gently toss to coat, allowing the ingredients to warm through for 2-3 minutes.

Add the cooked fettuccine to the skillet, tossing to combine with the sauce. If the sauce is too thick, add the reserved pasta water, a little at a time, until desired consistency is reached.

Step 8

Remove from heat and garnish with fresh parsley.

Serve immediately, optionally with additional grated Parmesan on top.
