Ingredients

  • 4 Large tomatoes
  • 200 g Lump crab meat
  • 1 large Avocado
  • 2 tablespoons Mayonnaise
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh parsley
  • 1 Green onion
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Paprika

Directions

Step 1

Wash the tomatoes and pat them dry with a paper towel.

Step 2

Slice off the top of each tomato and gently scoop out the seeds and pulp using a spoon, being careful not to tear the outer shell. Set the hollowed tomatoes upside down on a plate to drain.

Step 3

In a medium-sized bowl, combine the crab meat, diced avocado, mayonnaise, lemon juice, chopped fresh parsley, and finely sliced green onion.

Step 4

Season the crab mixture with salt, black pepper, and paprika. Mix gently to avoid mashing the avocado.

Step 5

Flip the hollowed tomatoes back upright and fill each one generously with the crab and avocado mixture.
