Directions

Step 1

Clean the mussels by scrubbing the shells under cold running water and removing any beards. Discard any mussels that are cracked or remain open after a gentle tap.

Finely chop the garlic cloves and parsley. Halve the cherry tomatoes.

In a large, deep skillet or pot, heat the olive oil over medium heat.
