  • 2 medium Celery stalks (diced)
  • 4 cups Beef broth
  • 400 grams Canned diced tomatoes (with juice)
  • 400 grams Canned white beans (drained and rinsed)
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Baby spinach (optional)
  • 2 tablespoons Fresh parsley (chopped, for garnish)
  • 1 loaf Crusty bread (for serving)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the steak cubes with a pinch of salt and pepper and sear them in the pot until browned on all sides, about 3-4 minutes. Remove the steak and set aside.
