Cut the beef chuck roast into 1.5-inch cubes, removing excess fat. Season the beef with 1 teaspoon of salt and 1 teaspoon of black pepper, then dust evenly with the flour.
In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Sear the beef in batches until browned on all sides, about 2-3 minutes per side. Remove the beef and set aside.
