  • 15 ounces canned black beans, drained and rinsed
  • 15 ounces canned kidney beans, drained and rinsed
  • 1.5 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoons chipotle chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 2

Season the beef stew meat with a pinch of salt and pepper. Add the beef to the pot in batches and sear until browned on all sides, about 5-7 minutes. Remove the beef and set aside.

In the same pot, add the diced onion and sauté for 3-4 minutes until softened.
