  • 1 lb ground beef
  • 12 oz smoked sausage
  • 4 russet potatoes

  • 15 oz kidney beans (canned, drained and rinsed)
  • 1 cup frozen corn
  • 1 yellow onion
  • 2 cloves minced garlic
  • 4 cups beef broth
  • 3 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 2 tsp chili powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil

Directions

Step 1

Peel and dice the russet potatoes into small, bite-sized cubes. Set aside.

Step 2

Slice the smoked sausage into half-inch pieces. Dice the yellow onion and mince the garlic if not pre-minced.

Step 3

In a large heavy-bottomed pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat.

Step 4

Add the ground beef and cook until browned, breaking it up into crumbles as it cooks, about 5-7 minutes. Drain excess grease if needed.

Push the browned ground beef to one side of the pot, and add the diced onion and minced garlic to the cleared side. Sauté for 2-3 minutes until softened and fragrant.
