Ingredients

  • 1 cup Sourdough starter (fed or discard)
  • 1 cup All-purpose flour
  • 1 cup Milk
  • 1 large Egg
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 3 tablespoons Unsalted butter (melted)
  • 1 as needed Vegetable oil or butter (for cooking)

Directions

Step 1

In a large mixing bowl, whisk together the sourdough starter, all-purpose flour, and milk until smooth. Let the mixture rest for 5 minutes to hydrate the flour.

Step 2

Add the egg, granulated sugar, baking powder, baking soda, salt, and melted butter to the bowl. Whisk until the batter is smooth and well-combined. The batter should be pourable but not too thin; adjust with a tablespoon of milk if needed.

Step 3

Heat a skillet or griddle over medium heat and lightly grease with vegetable oil or butter to prevent sticking.

Step 4

Pour about 1/4 cup of batter for each pancake onto the hot skillet. Space them out to allow room for spreading.

Step 5

Cook for 2-3 minutes, or until bubbles form on the surface and the edges start to look set. Flip the pancakes using a spatula and cook for an additional 1-2 minutes on the other side, or until golden brown.

Step 6

Remove the cooked pancakes and place them on a plate. Cover loosely with a clean kitchen towel to keep warm while you cook the remaining batter.

Step 7

Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, or a pat of butter.
