  • 1 pound ground beef
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn (fresh, canned, or frozen)
  • 1 red bell pepper (diced)
  • 0.5 yellow onion (diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons taco seasoning
  • 4 flour tortillas (large)
  • 2 cups shredded cheddar cheese
  • 2 tablespoons olive oil
  • 0.25 cup fresh cilantro (chopped, optional)
  • 0.5 cup sour cream (for serving, optional)
  • 0.5 cup salsa (for serving, optional)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Step 2

Add the diced onion and red bell pepper to the skillet. Cook until softened, about 3-4 minutes.

Step 3

Add the minced garlic and cook for 1 more minute, stirring frequently to avoid burning.

Step 4

Push the vegetables to the side of the skillet and add the ground beef. Cook until browned and fully cooked, breaking it up with a wooden spoon, about 5-6 minutes.

Drain any excess grease from the skillet, if necessary, and stir in the taco seasoning, black beans, and corn. Cook for 2-3 minutes, stirring occasionally, until everything is well combined and heated through.

Remove the beef mixture from the skillet and set aside. Wipe the skillet clean with a paper towel.

Heat the remaining 1 tablespoon of olive oil in the skillet over medium heat.

Spoon about 1/4 of the beef mixture over the cheese, then sprinkle another 1/4 cup of cheese on top. Fold the tortilla in half to cover the filling.

Cook for 2-3 minutes per side, or until the tortilla is golden brown and crispy, and the cheese is melted.

Repeat with the remaining tortillas and filling, adding more olive oil to the skillet as needed.

Slice each quesadilla into wedges and garnish with chopped cilantro, if desired.

Serve warm with sour cream and salsa on the side for dipping.
