Ingredients

  • 1 pound ground chuck (80% lean)
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 3 medium russet potatoes, peeled and diced
  • 3 medium carrots, peeled and sliced
  • 2 stalks celery stalks, sliced
  • 5 cups beef broth
  • 1 15-ounce can crushed tomatoes
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 2 tablespoons olive oil
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the olive oil.

Step 2

Once the oil is hot, add the ground chuck. Cook until browned, breaking it into pieces with a wooden spoon, about 5-7 minutes. Drain excess fat if needed and set the beef aside.

Step 3

In the same pot, add the diced onion. Sauté for 2-3 minutes until softened.

Step 4

Add the garlic to the pot and sauté for 30 seconds until fragrant.

Step 5

Stir in the diced potatoes, carrots, and celery, and cook for 5 minutes, stirring occasionally.

Step 6

Return the cooked beef to the pot. Stir in the smoked paprika, dried thyme, ground black pepper, and salt, coating the meat and vegetables in the spices.

Step 7

Add the beef broth, crushed tomatoes, Worcestershire sauce, and tomato paste. Stir well to combine.

Step 8

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, stirring occasionally.

Step 9

After 30 minutes, check that the potatoes and carrots are tender. Stir in the frozen peas and cook for an additional 5 minutes.

Step 10

Taste and adjust seasoning if needed.

Step 11

Serve hot, garnished with fresh parsley (optional). Pair with crusty bread or cornbread for a complete meal.
