Ingredients

  • 2 cups rolled oats
  • 1 cup shredded coconut
  • 1 cup crispy rice cereal
  • 1 cup semi-sweet chocolate chips
  • 0.75 cup smooth peanut butter
  • 0.5 cup unsalted butter
  • 0.33 cup honey
  • 2 teaspoons vanilla extract
  • 0.25 teaspoon salt

Directions

Step 1

Line a 9x9-inch baking pan with parchment paper or lightly grease it with cooking spray.

Step 2

In a large mixing bowl, combine the rolled oats, shredded coconut, and crispy rice cereal. Stir until evenly mixed, then set aside.

Step 3

In a medium saucepan over low heat, combine the butter, peanut butter, honey, and salt. Stir constantly until the mixture is melted and smooth.

Remove the saucepan from heat and stir in the vanilla extract.

Pour the warm peanut butter mixture over the dry ingredients in the mixing bowl. Use a wooden spoon or silicone spatula to mix everything until well combined.
