Ingredients

  • 2 tablespoons olive oil
  • 12 ounces smoked sausage, sliced into rounds
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 1 medium bell pepper, diced (any color)
  • 15 ounces canned pinto beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 10 ounces canned diced tomatoes with green chilies
  • 0.5 cup barbecue sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Step 2

Add the sliced smoked sausage to the skillet and cook for 5-7 minutes, stirring occasionally, until the sausage is browned. Remove the sausage from the skillet and set it aside.
