Ingredients

  • 2 tablespoons olive oil
  • 2 pounds ground beef (80% lean)
  • 1 large yellow onion, diced
  • 1 medium red bell pepper, diced
  • 4 cloves garlic cloves, minced
  • 2 tablespoons tomato paste
  • 28 ounces diced tomatoes (canned)
  • 15 ounces kidney beans (canned, rinsed and drained)
  • 15 ounces black beans (canned, rinsed and drained)
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoons cayenne pepper
  • 1 teaspoon kosher salt
  • 0.5 teaspoons black pepper
  • 1 cup corn kernels (optional, canned or fresh)
  • 1 cup shredded cheddar cheese (optional, for topping)
  • 0.5 cup sour cream (optional, for topping)
  • 0.25 cup fresh cilantro, chopped (optional, for garnish)

Directions

Step 1

Heat a large Dutch oven or heavy-bottomed pot over medium heat. Add olive oil and let it warm up for about 1 minute.

Step 2

Add the ground beef to the pot. Cook, breaking it apart with a wooden spoon, for 6–8 minutes or until browned. Drain any excess fat if needed.

Step 3

Stir in the diced onion and red bell pepper. Cook for 5 minutes, or until the vegetables begin to soften.

Step 4

Add the minced garlic and cook for 1 minute, stirring constantly to prevent burning.

Step 5

Mix in the tomato paste and cook for 2 minutes to deepen the flavors.

Step 6

Pour in the canned diced tomatoes, kidney beans, black beans, and beef broth. Stir well to combine.

Step 7

Sprinkle in the chili powder, ground cumin, smoked paprika, oregano, cayenne pepper, salt, and black pepper. Stir thoroughly to evenly distribute the spices.

Step 8

Bring the chili to a boil over medium-high heat, then reduce the heat to low. Cover the pot and let the chili simmer for 30–40 minutes, stirring occasionally.

Step 9

If using corn, stir it into the chili during the last 10 minutes of cooking.

Step 10

Taste the chili and adjust seasoning if needed. Add more salt, pepper, or cayenne for additional flavor or heat.

Step 11

Serve hot in bowls, optionally topped with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of fresh cilantro.
