Ingredients

  • 1 pound ground beef
  • 1 large onion, diced
  • 3 cloves garlic cloves, minced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper
  • 28 ounces canned diced tomatoes
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 2 cups beef broth
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt (for dumplings)
  • 2 tablespoons unsalted butter, melted
  • 0.5 cup whole milk
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat a large pot or Dutch oven over medium-high heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon, about 6-8 minutes. Drain any excess grease.

Step 2

Add the diced onion, garlic, red bell pepper, and green bell pepper to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Step 3

Stir in the chili powder, ground cumin, smoked paprika, dried oregano, and cayenne pepper. Cook for 1 minute to toast the spices.

Step 4

Add the canned diced tomatoes (including juice), kidney beans, black beans, and beef broth. Stir to combine.

Step 5

Season with salt and ground black pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer, uncovered, for 45-60 minutes, stirring occasionally.

Step 6

While the chili simmers, prepare the dumpling dough. In a medium bowl, whisk together the flour, baking powder, and salt.

Step 7

Stir in the melted butter and milk until a soft dough forms. Do not overmix.

Step 8

After the chili has simmered and thickened, drop spoonfuls of the dumpling dough onto the surface of the chili. You should get about 10-12 dumplings.

Step 9

Cover the pot and let the dumplings cook over low heat for 15-20 minutes, or until they are fluffy and cooked through. Avoid lifting the lid while the dumplings are cooking.

Step 10

Once the dumplings are ready, remove the pot from heat and let it rest for a few minutes. Serve hot, garnished with fresh parsley if desired.
