Ingredients

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon lemon zest
  • 3 cloves garlic cloves (minced)
  • 1 tablespoon dried oregano
  • 1 teaspoon paprika
  • 0.5 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 piece red onion (sliced into wedges)
  • 1.5 cups cherry tomatoes
  • 0.5 cup Kalamata olives
  • 0.5 cup feta cheese (crumbled)
  • 2 tablespoons fresh parsley (chopped)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the chicken thighs dry with paper towels and set them aside.

Step 3

In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, paprika, cumin, salt, and black pepper to make the marinade.

Step 4

Place the chicken thighs in a large mixing bowl or a resealable plastic bag. Pour the marinade over the chicken and ensure each piece is well coated. Let it marinate for at least 15 minutes, or up to 2 hours in the refrigerator for a deeper flavor.

Step 5

In a large ovenproof skillet or baking dish, arrange the sliced red onion and cherry tomatoes into an even layer.

Step 6

Remove the chicken thighs from the marinade (reserve any leftover marinade) and place them skin-side up on top of the onions and tomatoes.

Step 7

Drizzle any reserved marinade over the chicken and vegetables.

Step 8

Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden and crispy.

Step 9

In the final 5 minutes of baking, scatter the Kalamata olives over the dish.

Step 10

Once the chicken is cooked, remove the dish from the oven and let it rest for 5 minutes.

Step 11

Sprinkle the crumbled feta cheese and fresh parsley over the chicken and vegetables before serving.

Step 12

Serve hot with a side of warm pita bread or a fresh Greek salad for a complete Greek-inspired meal!
