Ingredients

  • 1 cup couscous
  • 1 cup water
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 0.25 cup red onion, finely chopped
  • 0.5 cup fresh parsley, chopped
  • 0.25 cup fresh mint, chopped
  • 0.5 cup feta cheese, crumbled (optional)

Directions

Step 1

In a small saucepan, bring 1 cup of water to a boil.

Step 2

Remove the saucepan from heat and stir in 1 cup of couscous and 1 tablespoon of olive oil. Cover the pan and let the couscous sit for 5 minutes to absorb the water.

Step 3

Fluff the couscous with a fork and transfer it to a large mixing bowl to cool to room temperature.

In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, lemon zest, salt, and black pepper to make the dressing.
