Ingredients

  • 1 cup couscous
  • 1.5 cup water
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 medium red bell pepper, diced
  • 1 medium zucchini, diced
  • 1 medium carrot, peeled and diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 0.25 cup fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 0.5 teaspoon black pepper

Directions

Step 1

In a medium saucepan, bring 1.5 cups of water to a boil. Add 1 teaspoon of salt and 1 tablespoon of olive oil.

Stir the couscous into the boiling water, remove from heat, cover, and let it stand for 5 minutes.

Fluff the couscous with a fork and set aside.

In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
